While in List View, hit the icon in the lower left bar of iTunes to bring up an image of the cover art of the currently playing track. 

Then click on the cover art, and it will pop open a seperate window with the album art and player controls.

Now you have a cool widget on your desktop for playing music that changes cover art when you change songs instead of using the iTunes window!
